"Cyclone" cow's milk cheese
This pungent, soft-ripened cow’s milk washed rind cheese has a similar texture to brie but is in the same category as tallegio, munster, epoisses and pont l’eveque. The orange rind develops as it is washed weekly with local beer or hard cider and is sometimes covered in blue and white molds as well. It is the quintessential “stinky cheese”.
